All our dishes are prepared with accurately selected ingredients, most importantly they are of an organic origin and are short- chain.
Our pasta dishes are all hand made using local flour.
Meat is mainly sourced from the Park of Val d’Orcia, we serve strictly Florentine beef IGP and our pork is always Cinta Senese IGP.
The fish is always freshly caught. Fish from the sea are sourced from the Mediterranean and our freshwater fish come from local lakes.
Vegetables are always seasonal and mainly organic.
The oil is always extra virgin olive oil DOP.
The cheeses we buy are locally made using traditional techniques.
The deserts are prepared daily by our chef with healthy, natural ingredients.
Our wine list favours labels from small producers in the Val d’Orcia and Siena region that hold the 5 DOCG and 12 DOC.
You will find in our Wine Bar a fine selection of Italian wines. Oil, cheeses and wine can all be bought and taken home from our Wine Bar.
